Ginataan Recipe: Bamboo Shots, String Beans, and Squash

This recipe is a hit in our home. I like the texture of the bamboo shots and the natural sweetness of coconut milk blended with the squash. It's easy to prepare and nutritious and my dear one loves this too. 

Serve: 4 People
Preparation Time: 10-15 minutes
Cook Time: 30 minutes

Ingredients: 
  • 10 pcs. String Beans, cut into pieces.
  • 2 cups Squash, cut into 1" thick. 
  • 1 cup Bambo Shots, cooked
  • 2 cups Coconut Milk, separate first and second extraction
  • 1 medium Bell Pepper, sliced
  • 1 medium Onion, sliced
  • 4 cloves Garlic, minced
  • Salt and Pepper to taste


Method:

  1. Put together second extraction of coconut milk, garlic, onion, and bell pepper in a pot and heat over medium - high flame. Bring to boil. 
  2. Add bamboo shots, and squash together, then bring it to boil.  
  3. Add string beans and the first extraction of the coconut milk, let it simmer for 5 minutes. 
  4. Season with salt and pepper. 
  5. Serve while it's hot.
